Cool autumn weather is around the corner and to celebrate, Burgerville is cracking open the apple cider! Or rather, we are mixing the hoppy deliciousness with creamy white cheddar to make the sauce of our cheesy dreams.

 

This fall, we are partnering with Finnriver Farm & Cidery from Chimacum, Washington, and we couldn’t be more excited! Finnriver began as an organic farm tended by friends and soon became a cidery with the mission to “Celebrate the beauty and bounty of the earth, to reconnect people to the land that sustains us and to grow community”. They now have 50 acres of organic orchards with 6,500 trees bearing apples from over 20 heirloom and traditional varieties. While they are most known for their hard ciders, Finnriver works with a number of land partners who also farm the land and share in a common purpose to explore and model how land and resource conservation, organic farming, and community-oriented rural enterprise can all work and thrive together.

 

Finnriver not only satisfies our taste for local food; they are also sustainability champions. The farm and cidery has achieved B Corp Certification, Salmon Safe Certification, and are a Washington State Certified Organic Farm. Small-scale doesn’t mean small impact! Their commitment to land conservation and restoration is embedded into their business, keeping people and our planet at the heart of what they do. Even their delicious hard cider is gentle on the environment as their cider making facility is mostly solar powered.

Finnriver’s Dry Hopped Cider is the magic ingredient in our new cheese sauce. Made in small batches using 100% organic apple juice from Washington apples, this cider is fermented on the farm and steeped with Salmon-Safe and Organic whole-leaf Cascade Hops for three days. The taste of this crisp, bright cider shines through the melty aged white cheddar from Rogue Creamery, making a sauce so delectable you will want to dip everything on the Burgerville menu!
